The article presents a comprehensive retrospective analysis of veterinary and sanitary surveillance data for food products at enterprises of the agro-industrial complex, trade, and public catering in the Irkutsk region over a six-year period (2019–2024). The study is based on the analysis of data for main product categories: meat and meat products, by-products, fish and seafood, milk and dairy products, table eggs, honey and bee products, and feed. The results show that the total volume of product inspections remains at a high level (peak in 2022 – 398,157); however, by 2024, a decrease to 244,378 is observed, which correlates with an increase in the number of laboratory tests (from 2,467 in 2019 to 3,027 in 2024), indicating a transition to a riskoriented control model. A significant increase in the absolute volumes of products removed from sale was identified (from 596.98 tons in 2019 to 1089.192 tons in 2024), especially for the categories "Meat of all types" and "By-products". The largest volumes of seizures in unit terms are attributed to table eggs. The structure for handling non-conforming products is rational: utilization and industrial processing predominate (collectively more than 98%), while the share of destruction is minimal (<2%). The results indicate stable functioning of the control system and its adaptation to modern challenges, while simultaneously revealing persistent risks in raw material segments (by-products, eggs).
