Under favorable conditions, high-quality honey can be stored for a long time, but it is one of the products of often undergoing falsification. Sometimes it is not a quality product that can be recognized immediately - to taste and smell, but more often - only with laboratory analysis. In this regard, honey, like many food products, is subject to veterinary and sanitary examination. The article presents the results of a veterinary and sanitary assessment of honey of different apiaries of the Krasnoyarsk Territory. For the study, we took 17 samples of samples of natural honey. Conducted organoleptic and laboratory analysis of the quality and naturalness of honey. Also, as part of the study, a tasting assessment of all samples was carried out. The results of the organoleptic assessment of all tests under study, except for samples No. 1 and 8, met the requirements of GOST 19792 - 2017. Physico-chemical studies showed the excess of moisture in samples No. 8, No. 11 and No. 12. The number of reducing sugars only nine samples meets regulatory requirements and exceeds 65%. The admixture of the Padi was detected in three samples, as well as an admixture of starchy pathos is found in two other samples. In all the samples of honey, pollen grains of various plants were found, which indicates that honey is natural, polyflore. As a result of the studies, it was found that the samples of the honey of Pasyki G. Sharypovo, Bogotol and the city of Uzhur, as well as the cops of the apiary near the village of the Sharypovsky district, the apiaries at the village of Parny Sharypovsky district, the apiary of the village. The Big Murta and the settlements of the Emelyanovo of the Emelyanovsky district correspond to GOST 19792 - 2017, so this honey can be released for food purposes without restrictions.
